his recipe makes an amazing side dish: Caramelized Onion and Cheesy Mashed Potatoes. It's a perfect combination of sweet, savory, and creamy goodness that everyone will love.

In a large skillet toss in the diced onion, olive oil, butter, salt, pepper, and sugar. Put it on medium-low heat and let it cook for around 40-50 minutes. Make sure to give the onions a gentle stir every now and then.

Cube the potatoes and put them in a large pot. Pour enough water to cover them up. Put the pot on the stovetop and bring it to a boil. Once it starts bubbling away, lower the heat to medium-high and let the potatoes cook until fork tender.

Drain the potatoes, transfer to a mixing bowl and mash. – Pour in the milk, melted butter, salt, and pepper into the mashed potatoes. Mix everything together.

At this point, the caramelized onions should be done, or close to. Once they're a rich brown, soft, and beautiful fold them, along with the gruyere cheese, into the potato mixture.

For a final touch, sprinkle fresh parsley on top of the potatoes. If you're feeling a bit extra, add a little extra butter too.
