This oven-baked cod is light, flaky, and juicy! Cod fillets are nestled in tomatoes and pepper and baked to mouthwatering perfection—an easy, healthy, and delicious dinner recipe.

Preheat the oven to 400℉. Heat a large oven-safe skillet over medium-high heat. Once hot, add the olive oil. Add the onions and fennel to the skillet and cook for 2 to 3 minutes or until tender. Stir in the garlic and cook for 1 minute.

Add peppers and tomatoes. Season with ¼ teaspoon salt and ¼ teaspoon pepper, and continue to cook for 2 to 3 minutes,. Stir in chicken broth and 1 tablespoon of unsalted butter. Bring to a simmer and continue to cook.

Season cod filets with the remaining salt and pepper. Turn off the heat. Nestle the cod filets into the tomato mixture in the skillet. Top with the remaining butter.

Bake for 15 to 18 minutes or until the fish flakes through. Remove from the oven and garnish with crumbled feta, fresh herbs and lemon slices. Enjoy hot.
