Pat the chicken thighs dry with a paper towel to remove excess moisture. Add chicken to a large mixing bowl.
In a small mixing bowl, whisk together olive oil, lemon juice and seasonings.
Pour lemon mixture over the chicken thighs. Rub the mixture with your clean hands all over the chicken skin.
