Chicken and Spinach Pasta
This quick and easy comfort food dinner is perfect for busy days. Chicken and spinach are cooked in a creamy garlicky sauce and nestled in tender penne.

Ingredients
- 1 lb penne pasta uncooked
- 2 tbsp extra virgin olive oil
- 3 cloves garlic minced
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp red pepper flakes
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 2 cups heavy cream
- 1 lb spinach
- 2 cups rotisserie chicken shredded
- 10 sun-dried tomatoes chopped
Instructions
- Bring a large pot of water to a boil. Salt the water and add the pasta to the boiling water. Allow the pasta to cook for 7 to 8 minutes or until the pasta is just under al dente. Reserve 1 cup of pasta water. Drain the pasta in a colander.
- While the pasta is cooking, add the olive oil to a large pot over medium heat. Then add the garlic. Stir and cook until the garlic is softened, 1 to 2 minutes.
- Season with salt, pepper and red pepper flakes. Stir to combine.
- Add the chicken broth, Parmesan cheese, and heavy cream. Stir to combine all the ingredients. Taste and season, if needed. Reduce heat to medium low.
- Add the cooked pasta and spinach to the sauce and stir to combine. Allow the spinach to wilt (about 2 to 3 minutes).
- Add the chicken and stir. Add some of the reserved pasta water if the sauce seems too thick (about ¼ cup at a time).
- Stir in the sun-dried tomatoes. Serve hot.
