Teriyaki Shrimp Stir Fry

Ingredients
- 1 tbsp extra virgin olive oil
- 1 lb raw shrimp peeled and deveined
- 2 cups snow peas
- 2 heads broccoli chopped into small florets, about 3 cups
- 1 yellow pepper cut into thin strips
- 4 cloves garlic minced
- ½ tsp minced ginger
- 2 tbsp light brown sugar
- 1 tbsp rice vinegar
- ¼ cup soy sauce
- ¼ cup water
- 1 tbsp cornstarch
- 2 green onions thinly sliced (about 3 to 4 tbsp)
- 1 tbsp sesame seeds
Instructions
- Add the brown sugar, rice vinegar, soy sauce, water and cornstarch in a small bowl. Whisk together until no lumps remain.
- Heat oil in a large wok or skillet over medium high heat. Add the snow peas, yellow pepper, and broccoli. Saute until veggies are tender-crisp, about 3 to 4 minutes.
- Add the shrimp, garlic and ginger to the wok. Stir to combine. Cook for another 3 to 4 minutes until the shrimp is cooked.
- Pour the sauce into the wok and stir to combine. Cook another 2 minutes, until the sauce has thickened enough to coat the back of a spoon.
- Garnish with sesame seeds and green onions. Serve hot.
