Ingredients
- 12 oz cooked sausage sliced
- 1 ½ lbs gold baby potatoes halved
- 1 large green pepper diced
- large yellow onion diced
- 1 can diced tomatoes 14oz can
- ¾ cup chicken broth
- 2 garlic cloves minced
- 1 tsp Italian seasoning
- ½ tsp kosher salt
- ¼ tsp black pepper
- grated or shredded Parmesan cheese for serving
Instructions
- Add the ingredients to a 5 quart or larger slow cooker. Stir together.
- Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours or until the potatoes are fork tender. Adjust salt and pepper, to taste.
- Garnish with Parmesan and serve hot.
Notes
I used chicken sausage, but any cooked sausage will work.
