Rub the garlic with salt and olive oil, then wrap in foil.
Roast in a preheated oven for 20 minutes, or until garlic is soft.
Make the Creamy French Onion Sauce
Melt butter in a Dutch oven over medium heat. Meanwhile, in a separate frying pan, sauté sliced mushrooms for 15 minutes.
Add sliced onions to the Dutch oven with the melted butter. Caramelize the onions, stirring often, for about 20 minutes.
Cook the pasta to al dente, following the instructions on the back of the box. Reserve 1/2 cup of pasta water.
Squeeze the roasted garlic out of the bulb and add it along with the sautéed mushrooms to the Dutch oven. Cook for 10 minutes.
Deglaze the pan with white wine. Sprinkle flour over the mixture and stir for 2 minutes.
Pour in reserved pasta water, thyme, salt, pepper, Worcestershire, and cream.

- ¼ cup salted butter
- 2 large white onions thinly sliced
- 1 tbsp all purpose flour
- 1 garlic head
- 1 tbsp olive oil
- 1 tsp truffle salt
- 1 cup baby Bella mushrooms sliced
- 1 tbsp all purpose flour
- 3 tbsp white wine
- ½ tbsp fresh thyme leaves
- 1 tsp salt
- 1 tsp coarse black pepper
- 1 tsp onion powder
- 1 tbsp worcestershire sauce
- 2 cups whipping cream
- 1/2 cup parmesan cheese
- 1/4 cup Parsley chopped
- 1 lb Linguine a 454g or 16oz box
Instructions
- Preheat the oven to 375*. Heat a Dutch oven over medium heat, and a frying pan over medium heat.
- Remove most of the skin from the garlic bulb and slice off the top. Place onto the center of a foil square and drizzle with olive oil and truffle salt. Roll up foil and place into the oven for 20 minutes to roast.
- Add butter to the Dutch oven and melt.
- Add mushrooms to the frying pan and sauté for 15 minutes
- Once the butter is melted in the Dutch oven, add the sliced onions. Caramelize, stirring often, for 20 minutes
- Meanwhile, cook the pasta Al dente according to package directions. Reserve ½ cup pasta water.
- Squeeze the roasted garlic out of the bulb.
- Add mushrooms and garlic to the Dutch oven and cook for 10 minutes.

- Next, sprinkle flour over the top and stir. Cook for 2 minutes.
