Coconut Lime Chicken Marinade

Coconut Lime Marinade Ingredients

  • Coconut Milk (canned, full fat)
  • Lime juice (fresh)
  • Garlic powder
  • Fresh ginger
  • Honey
  • Chili flakes (red pepper flakes)
  • Salt

Ingredient Substitutions

  • Full-fat coconut milk. You can use lite if that’s what you have on hand, but it has to be canned coconut milk.
  • Lime juice. This recipe was tested with fresh lime juice, but you could use lemon if that’s what you have on hand. I use this bottled fresh lime juice and it’s a great resource to have in your fridge.
  • Garlic powder. Go ahead and use fresh garlic. I’d add 4 cloves, but do what your heart tells you. Mince it fine so all the juices and oils come out.
  • Fresh ginger. You can use powdered ginger. Measure with your heart. I’d start at 1 teaspoon.
  • Honey. You can substitute with pure maple syrup (not pancake syrup) or brown sugar.
  • Chili flakes. If you don’t want any heat, you can leave them out.

Everything you need to make this marinade, you should have in the kitchen. You can use either a bowl or a resealable bag to marinate your protein.

What can I marinate with coconut milk and lime?

If you’re looking for other uses for this coconut lime marinade other than chicken breast, here are a few ideas:

  • Shrimp
  • Boneless, skinless chicken thighs
  • Flank steak or skirt steak
  • Pork (either pork tenderloins or sliced pork loins work well)
  • Rice or quinoa (use this marinade as the liquid it cooks in)

Coconut Lime Chicken Freezer Meal

This recipe freezes well.

You can add the marinade and chicken breast or chicken thighs (either whole or cubed) to a resealable bag and lay them flat in the freezer.

This will keep in the freezer for 1-3 months and it’s a great way to prepare a few flavorful marinades after a big bulk shop at Costco (or if you hit up a big sale).

I used chicken breasts to marinate but you can use chicken thighs as well, or use this as a chicken wing recipe.

The longer the better. I would advise marinating the chicken in the fridge for at least 1 hour, but marinating this overnight for full flavor is recommended.

The coconut cream is the fat content of the coconut milk (the white at the top of the can). You can use coconut cream but add more lime juice or a bit of water to thin it out.

You can use maple syrup or add a little brown sugar.
